Naringin is a kind of organic matter, its chemical formula is C27H32O14 [2]. It is soluble in methanol, ethanol, acetone, acetic acid, dilute alkali solution and hot water. At room temperature, the solubility in water is 0.1%, and can reach 10% at 75℃. It is insoluble in petroleum ether, ether, benzene and chloroform and other non-polar solvents. The content of naringin and its melting point vary with the crystallization and drying methods. There are 6 ~ 8 crystalline waters in the naringin molecule obtained by using water as solvent, and the melting point is 83℃. The naringin molecule obtained after drying at 110℃ to constant weight contains two crystalline waters, and its melting point rises to 171℃.
